1 cup sprouted lentils
4 tart apples chipped in small chunks
1/2 chopped walnuts
Tahini dressing (recipe to follow)

Soak green or French lentils over night in water.
pour off water and let sit 3 days rinsing each day with cool water in the am and pm
add sprouts chopped apples and chopped walnuts
toss with lemon juice
add white tahini sauce

6-8 medium cucumbers
1  small red onion
1/4 red pepper
1/tsp fresh dill
1/4 tsp chili  pepper

reserve 1/2 cup diced tomato and 1/2 diced cucumber
place all other ingredients in blender and puree
add back to soup the diced tomato and cucumber
chill and serve may add a tablespoon of fresh goat yogurt or croutons
